Turkey Egg Roll in a Bowl with Spicy Mayo

In February 2017, I was trying to drop a few post-holiday pounds and decided to cut my carbs a bit. Not remove totally, just cut back. It was during this time I discovered a recipe called Sausage Egg Roll in a Bowl (click to see previous recipe) on a website called Bun in My Oven.

It was super easy to make as it used bagged coleslaw mix instead of slicing and grating individual ingredients and super quick. Best of all, it was filling and really tasty (thanks in part to the flavourful sausage). The down side was servings. It would only be tiny servings for 4. As full meal portions, def only served 2 or 3.

Then while visiting my daughter and her husband in Kingston, Ontario, in January 2020, she used a free meal planning app she likes called Mealime to plan the menus for us.  She was busy working on editing one day and asked if I'd make supper. I was delighted. With her so far away, I didn't often get to do things for her.  

She sent me the recipe link provided by Mealime and, lo and behold, it was a ground turkey version of egg roll in a bowl that is probably a healthier option (well at least without the mayo). It included all fresh ingredients, scrambled eggs and a spicy mayo on the side to give it that flavour pop provided by the sausage in my other one. 

It definitely took a lot more time to make with all the fresh ingredients that needed prepping, but definitely healthier with a lighter flavour. It's a great choice if you have more time or are avoiding pork sausage.  And best of all - it made 4 big full meal servings with enough leftover for a single lunch the next day.

Turkey Egg Roll in a Bowl with Spicy Mayo
Ingredients -
2 tsp    Toasted Sesame Oil
.7kg     Ground turkey - or more if you like a more filling dish.  We used more!
4          Cloves garlic, peeled and minced
1          Medium yellow or sweet onion, diced
2          2.5 cm pieces of fresh ginger root, peeled and grated or minced
2          Medium carrots, grated or julienned
1          Medium head Napa cabbage, half lengthwise, then thinly slice crosswise into shreds 
1/4C    Tamari or Soy Sauce
1/8 tsp Crushed red Pepper (or to taste)
2          Eggs, beaten
1          Small bunch of green onions, sliced
2 T      Sesame Seeds

Spicy Mayo
2 tsp     Chili-garlic sauce (my daughter used Sriracha Sauce)
⅛ tsp    Salt 
¼ C      Mayo (or your fav mayo substitute)

Directions - 
Preheat a large skillet over medium-high heat. Wash and dry the fresh produce. Prepare as noted above.

Once the skillet is hot, add oil and swirl to coat the bottom. Add the ground turkey to the skillet; cook, breaking apart with a spoon until nearly cooked through, 3-4 minutes. Add garlic, onion and ginger to the skillet and saute. Recipe says 30 seconds, but I gave it a little more time as these ingredients can have a strong flavour. 

Add carrots and cabbage. Stir to combine and then season with soy sauce (or tamari) and crushed red pepper flakes. When cabbage is cooked, drain off excess liquid, and turn the heat down to low. Make a well in the center of the skillet and crack the eggs into it. Scramble until no longer runny, 1-2 minutes, then stir to combine. In a small bowl mix together chili-garlic sauce, salt, and mayo.

To serve divide egg roll mixture between bowls. Top with green onions, sesame seeds, and spicy mayo. Enjoy!
