Sometimes I throw caution to the wind and try a
recipe that sounds
unusual and off-beat. Such is the case with these
muffins. I stumbled across a company call
Sun River Honey and decided to explore their website. I liked their motto - "
Honey that Helps." I loved it is a family business - Aaron, Shannon, mom and dad - and that it is a
Canadian company located on the family farm near Grandora,
Saskatchewan. And I love this
quote by Aaron, their president, "Focus on
helping others - the rest will take care of itself."
Businesses like this need our support to
succeed, so I decided to try something
unusual and very out of the box for me -
turmeric and
ginger honey. At the same time, I explored the
recipes on their website and decided to make the
Turmeric Ginger Honey Muffins when my package arrived. While my package came quickly,
life interfered, and it would be several months before I followed through. Yesterday was the day.
The batter mixed up easily and baked to perfection. The muffins puffed up beautifully and instead of sinking down as they cooled, stayed in the same domed shape. The texture was smooth and the color bright and appealing. I am honestly not much of a baker, so was very pleased. Then came the taste test. Because of the color, they look like cornmeal muffins so you expect a grainier texture. Their smooth texture was a surprise. They are not sweet which I like, and the unusual tastes of turmeric and ginger shine through.
I suspect these muffins won't be to everyone's taste. Many prefer a sweeter muffin, more dessert type muffin with a classic flavor. These are unusual, but that's exactly what I found intriguing. I suspect they would be very good served with ethnic foods that include the same flavor notes. I also think they would be great served warm, drizzled with a blended mixture of melted butter and warm honey.

Turmeric/Ginger Honey Muffins
Makes 12 large muffins.
Ingredients -
2 C Flour
3 tsp Baking powder
½ tsp Salt
1 Large egg
1 C Milk
¼ C Melted butter
½ C Turmeric + Ginger infused Sun River Honey
Instructions -
Preheat oven to 375-degree. For easy clean up, line twelve muffin cups with large or jumbo size paper muffin cups.
Measure and blend together the flour, baking powder and salt in a large mixing bowl. Gently melt the butter in a microwave at 20 second increments until melted 40- 60 sec total. Lightly grease the inside of your ½ cup measuring cup with oil or butter, prior to filling with honey,(this prevents the honey from sticking to the inside of your measuring cup)
Measure ½ cup of Turmeric Ginger infused Sun River Honey into your ½ cup measuring cup then add to the melted butter stirring the mixture until thoroughly blended. Lightly beat the egg and the milk together with a fork. Add the milk, egg and the honey butter mixture to the dry ingredients stirring until just nicely blended. Fill the muffin cups ¾ full and bake on the center rack of a 375-degree F oven for 18 -20 minutes.
Cool on a wire rack before storing or freezing.
