Air Fryer Garlic Parmesan Potatoes

For Christmas I requested an Instant Pot® Duo™ Crisp
+ Air Fryer
. I had thought about buying an air fryer for awhile now, but just didn't want to get another appliance as my kitchen is fairly small. Then I saw this.  It has 11 functions and replaces numerous devices. 

The only one on the shelf in the store was the 8 quart which is large, and it has 2 separate large lids, plus accessories.  So it's going to take some space in the cupboards. But again, it replaces a crockpot, pressure cooker, dehydrator, air fryer, etc.  So it's a fair trade off. 

The Instant Pot lid is used to pressure cook, sauté, steam, slow cook, sous vide and warm. The Air Fryer lid offers 5 crisp cooking functions: air fry, roast, bake, broil and dehydrate. For storage I might have preferred the smaller 6 quart model, but for air frying, I think it's nice to have the extra cooking capacity.

I have to admit, just looking at it I was intimidated. So many pieces. So many buttons.  I needed to start cooking in it as soon as possible to get past my apprehension. So today when my friend Carolyn sent me a link to an air fryer recipe for garlic parmesan potatoes on a website called Butter Your Biscuit, I thought I'd check it out. It looked wonderful, so decided to make this my first air frying attempt.

In looking through the website I noticed a lot of other interesting recipes, so I also snagged one for Sweet N Spicy Grilled Chicken Thighs to add to my night's menu. I'll be sharing this recipe in the next few days. This combo let me handle the potatoes and sides, while my husband took care of the grilling the meat. Neither recipe was difficult, and the potatoes turned out nicely crisped and were very flavourful.  My husband paused while eating, looked up and said, "This is really good."  Just what I wanted to hear. I'll be making these again.  


Learning how to use all the options with this device will be a slow exploration over time as I don't intend to cook in it every night. However, so far I'm a fan. For now I just have to figure out where to store it when not in use.  I'll probably be reorganizing the cupboards tomorrow.

Air Fryer Garlic Parmesan Potatoes 
Note (she says 6 servings, I would say 3-4)

Ingredients

1-1/2 lbs.        Potatoes (Russet or Red, skin on or off)
2 T                 Olive oil
2                     Cloves garlic, minced
1 tsp               Kosher salt
1/2 tsp            Black pepper
1/2 C              Grated parmesan (not the powdery stuff)
2 T                  Fresh chopped parsley
Non-stick cooking spray

Instructions - 

Cut your potatoes into 1 inch cubes. In a medium bowl add the potatoes, olive oil, garlic, salt, pepper, parmesan, and parsley and mix until combined.

Preheat the air fryer to 400 degrees for 3 minutes. Spray the inside with non stick cooking spray. Add in the potatoes and cook for 15 minutes. Shake the basket or toss with tongs to mix the potatoes around. Cook for an additional 10 minutes or until they have reached your desired crispiness.

Serve!
