Crunchy Chicken Wraps with Mango Salsa and Cilantro Lime Slaw

We rarely have a
week of high temps where I live, but they do happen. This week is one. We are all enjoying the sun and super long days (it's light until 10 p.m.).  However, we don't have a lot of air conditioning in our homes as it's just not often needed. By early evening the sun has heated our home and I struggle to figure out dinner. My husband just wouldn't eat salad every day for a week. 

Mid-afternoon yesterday I had a brain storm idea. Why not do some crunchy frozen chicken strips in my air fryer. That wouldn't heat the house much. Then chop them up and use them to make wraps with a fun home made salsa and slaw. For my wraps I used large curly lettuce leaves and loved it. My husband ate one and declared it too messy - it was messy - and snagged flour tortillas for his second (and third).  So up to you how you eat it.

I honestly didn't serve anything with it. With the heat we weren't that hungry and it was an all in one meal with meat, fruit and salad wrapped up in one neat package.  We also ate it outside on our little patio table which was way cooler as there was a light breeze. If I could do it again, I would probably have bought some gelato or fruity sherbet to end the meal. We didn't need it, but who doesn't enjoy a frozen scoop of tasty goodness to end a meal on a hot day?


Sorry I don't have exact amounts for some of this. Honestly you just make as much as you need for the number of people you want to serve.  I did look at a site called One Lovely Life for the lime coleslaw and the mango salsa recipes, and I added 2 alternatives from recipes already on my blog. But feel free to make up something along these lines that suits what you want in a wrap.  Make it your own.

Crunchy Chicken Wraps with Mango Salsa and Lime Slaw

                Box your favorite frozen crunchy chicken strips (or make your own from scratch)
1                 Head leafy lettuce
optional      package of small or medium flour tortillas
Mango Salsa (suggestions below)
Lime Slaw (suggestions below)
                Large avocado peeled and sliced.

Make your Mango Salsa and Lime slaw 2 hours before serving time so they have time for the flavors to mingle. Not required, but softens the onion and jalapeno.

The very best way to cook your crunchy chicken strips is in an Air Fryer. As a bonus, it won't heat your house on a hot day.  I cooked mine for 10 min. in my air fryer at 400.  Then I turned them and cooked them another 10 minutes.  If you don't have an air fryer, then cook as directed.  

Place the fully cooked chicken on a cutting board and cut into bite size pieces. Set out plates/bowls of crunchy chicken pieces, large lettuce leaves, salsa, slaw, sliced avocado and, if you want, flour tortillas. Let everyone build their own.  Make sure there are lots of napkins available.

Lettuce wrap - place a large leaf of lettuce on your plate.  Add chicken, then salsa and slaw. Lay a few slices of avocado on top.  Fold the lettuce around the filling and enjoy.  THIS IS MESSY, so lean over your plate and have lots of napkins. 

Tortilla wrap - lay a tortilla on your plate and then lay a lettuce leaf on top.  Top with chicken, salsa and slaw, and lay a few avocado slices on top. Fold up like a burrito. 

Mango Salsa

2 cups diced mango (about 2 red or 3 yellow mangos)
1/4 cup finely minced red onion
1–2 Tbsp. finely minced jalapeño
2–3 Tbsp. minced fresh cilantro
1/4 tsp. salt (or, to taste!)
Juice of 1/2–1 lime (1–2 Tbsp.)

Cilantro Lime Slaw

From One Good Life
2 cups coleslaw mix or shredded green cabbage
2 cups shredded purple cabbage
1/4–1/2 cup chopped cilantro
2 Tbsp. fresh lime juice (from 1 lime)
1–2 tsp. honey or agave (optional)
1/4 tsp. salt (more or less, to taste)
1/4 tsp. pepper (more or less, to taste)
