Marry Me Chicken Orzo (One Pot)

When I
was down visiting my older brother recently, my sister-in-law made several great meals, so I decided to share a couple of them on my blog.  The first was Marry Me Chicken Orzo.  There are tons of Marry Me Chicken recipes out there, and I'd always been curious about them.  I did a screen shot of the recipe she had printed, then did a search to see who created it.  I believe it was Taming Twins as their recipe was identical.

Of course, like me, she made several small changes in amounts to use up ingredients or adjust it to her preferences, but they were honestly very minor.  What I share below is her recipe with the original recipe amounts in parentheses after.  It was easy to make, and didn't take tons of time.  You could speed it up even more by using a rotisserie chicken.  I haven't tried this, though, so maybe for the first time go with the recipe as is. 

We all loved this.  I would say it easily serves 6, especially with bread.  If you wanted you could also serve a cooked vegetable, a raw veggie tray, or nice green salad on the side.  She offered garlic bread which really hit the spot for me.  I was stuffed after.

Marry Me Chicken Orzo (One Pot)
6 Servings.

Ingredients

1-1/2 lbs.                 Chicken breast, diced (original recipe 1-1/4 lb.)
1 T                           Olive oil Or oil from sun dried tomatoes jar
3 cloves                   Garlic, minced or pressed. 
6 oz.                        Sun-dried tomatoes (in oil) Drained
1 tsp.                        Oregano
2 tsp.                        Paprika
8 oz.                         Orzo (original recipe 9 oz.)
2-3/4C                      Hot chicken stock 
3/4 C                        Half & Half (original recipe used Double cream)
2 oz.                         Parmesan, grated
5 oz.                         Spinach (original recipe 4 oz.)
Freshly ground black pepper

Instructions -

In a large, deep frying pan, heat the oil over a medium heat. When it's hot, carefully add the chicken pieces. Cook for 5 minutes stirring occasionally until all sides are starting to colour. Reduce the heat and add the garlic, sun-dried tomatoes, oregano and paprika. Stir for 3-5 minutes until the garlic is softened.

Add the orzo, stock, and some pepper and give everything a good stir and put the lid on. Cook for 10 minutes, stirring occasionally, until the orzo is almost cooked. Turn the heat to the lowest setting add the spinach and cream and stir very well for 1-3 minutes until the spinach is wilted and the cream is heated through. 

Check the chicken is cooked through. Turn off the heat and stir in the parmesan.
