Sweet N Spicy Grilled Chicken Thighs

In my post about making Air Fryer Garlic Parmesan Potatoes a few days ago, I said I would also share the recipe for the Sweet N Spicy Grilled Chicken Thighs served with them.  

This was a super easy grilling recipe I found on a website called Butter Your Biscuit! The image to the left is theirs. You simply toss the boneless, skinless chicken thighs in a ziplok bag with all the marinating ingredients and put in the fridge for a minimum 4 hours, but can be overnight. Then you simply put on the grill to cook giving them a lovely colour and that can't be replicated inside BBQ char flavour. 

I do have to admit, though, I switched out the thighs.  For this recipe, the choice of chicken thighs really is best. They will give you a much juicier finished product. No question. But I still prefer chicken breasts even though the final product comes out dryer. So I don't recommend this switch at all unless like me you have a strong preference, and then just know your final product won't be as juicy. I cut the breasts in half length wise to give the marinade more surface area to soak into - and perhaps some oil in the marinade would help offset the dryness of this cut of poultry. I'll be trying that next time.

Those air fryer potatoes combined with these fries meant supper was fast, easy and full of flavour.  I'll be making both again! And be sure and check out the Butter your Biscuit website as they have a lot of interesting recipes to explore there.

Sweet N Spicy Grilled Chicken Thighs

Ingredients - 
3 lbs.        Boneless skinless chicken thighs
3 T           Brown sugar
2 tsp         Onion powder
2 tsp         Chili powder
1 T           Smoked paprika
2 tsp         Granulated garlic (or powder)
1 tsp         Dried oregano
1 tsp         Salt

Instructions - 

In a small bowl combine brown sugar, onion powder, chili powder, paprika, granulated garlic, oregano and salt and mix. In a bowl or large ziplock bag add your chicken and sprinkle the seasoning mixture and toss until well coated. Let set 4 hours or overnight for best flavor.

Grill chicken thighs covered over medium heat for 5-6 minutes on each side. Or until internal temp reaches 165 degrees and juices run clear.
Let rest 5 minutes before serving.
